The best time to visit Egypt is from October to April, so this is the right time for you to plan your trip to the Pyramids. With the temperatures lowering down during this time, you will be able to enjoy the busy streets of Cairo and the ancient sites like the Pyramids of Giza, Luxor, and Abu Simbel with your better half.

You need to carry a negative RT-PCR report, not older than 72 hours, or else you will have to get tested upon arrival in Egypt.
