Spice, Soul & Strategy: Spice & Brew

Gaurav Chopra, founder of Spice & Brew, brings the values of his agricultural roots into the world of hospitality. With a focus on authenticity, consistency, and customer experience, he has built a café brand that blends traditional flavours with modern dining culture, offering warm spaces where food, people, and memories come together.

What inspired you to start Spice & Brew?
Coming from a farmer family, I have always valued hard work, authenticity, and staying connected to roots. Agriculture teaches patience and quality — you reap what you sow. That philosophy inspired Spice & Brew. I wanted to create a place where people could enjoy authentic flavours, fresh ingredients, and a warm atmosphere that feels like home. The idea was to combine traditional taste with modern café culture — a space where families, friends, and youngsters can connect over good food.

What makes Spice & Brew stand out from other cafés/restaurants?
Our balance of quality, affordability, and ambiance truly differentiates us. We focus on fresh ingredients and consistent taste, and our menu blends Indian flavours with contemporary café offerings. We maintain a welcoming, family-friendly environment, and every outlet follows standardized processes to ensure the same experience across all three locations. For us, it’s not just about serving food — it’s about creating memorable dining experiences.

What has been your biggest challenge as a restaurant owner?
The biggest challenge has been maintaining consistency while expanding. As you grow from one outlet to multiple locations, ensuring the same taste, service quality, and customer satisfaction requires strong systems and a reliable team. Rising costs in the F&B industry while keeping pricing customer-friendly is another challenge that demands constant planning and operational efficiency.
